Whenever I have friends coming over unexpectedly for a cup of something, I will make this quick and easy sponge cake. Here is the plain version, but you can add a few drops espresso coffee and decorate with coffee butter cream and walnuts or add cocoa powder and decorate with chocolate butter cream and grated 90% dark chocolate.
If you have children coming, then this will also make little buns.
Weigh three eggs
the same weight each of:
self raising flour
Filling of your choice – whipped cream, butter cream, matching jams with fresh fruit to decorate the top, lemon curd…
Set the oven to 180C. Butter 2 sandwich tins with a 20cm diameter
Cream the butter and sugar together until light and fluffy, and then slowly add the beaten egg.
Fold in the sifted flour and spoon the mixture into the prepared cake tins
Bake for 20 minutes. Leave to cool and then remove from the tins
Fill and decorate…
